I love kanelbullar. They are my favourite Swedish pastry. These soft and fluffy cinnamon rolls are an essential part of every Swedish coffee break (fika). So far, I have not come across any cinnamon rolls outside of Sweden that can keep up with the original kanelbullar. Today, on 4 October, the Swedes celebrate kanelbullens dag. A good opportunity to simply bake the delicious cinnamon rolls yourself using the following recipe.
Recipe for swedish cinnamon rolls (kanelbullar)

For the dough:
25g yeast
50g butter
250 ccm milk
50 ccm sugar
1 tsp. ground cardamom
650 ccm wheat flour (no self rising flour)
For the filling:
3 tbsp. butter
3 tbsp. sugar
1 tsp. ground cinnamon

Preparation:
– Melt the butter in a saucepan. Add the milk. The mixture should be lukewarm.
– Dissolve the yeast in a little of the milk. Then mix with the rest of the milk.
– Mix the yeast milk with the sugar and cardamom in a bowl.
– Then add the flour and mix everything into a smooth dough. Cover the dough and leave to rise in a warm place for 40 minutes.
– Then knead the dough and roll it out not too thinly (0.5 cm thick).
– Mix the ingredients for the filling to a paste and spread evenly over the rolled-out dough.
– Roll up the dough into a log and cut into even pieces with a knife in 8-10 pieces. Place the pieces in paper cases and let them rise again for half an hour.
– Meanwhile, preheat the oven to 225 degrees Celsius and bake the cinnamon rolls for about 10 minutes.
– Let them cool briefly and enjoy them while they are still slightly warm.
